Best Vegan Burger Recipe

This recipe was created because I wanted a homemade alternative to a fast food burger. The recipe had to be healthy and vegan, because I am a lover of vegetarian food! I pair these with some homemade sweet potato wedges, and an onion barbeque sauce.( Recipes coming soon). These patties are meal prep friendly. You can make them in bulk and keep in the freezer for about 4 weeks, so Enjoy!

Ingredients:

  • 1 onion
  • 1 tsp olive oil
  • 2 cloves garlic
  • 1/2 can kidney beans
  • 1/2 can chickpeas
  • 1/2 can butter beans
  • 1/2 tsp mixed herbs
  • 1 tsp oregano
  • Pinch of smoked paprika
  • 1 tsp peanut butter
  • 1 slice bread crumbs

Method:

Fry onions and garlic together on low heat, till they turn see through. Add beans to large mixing bowl and mash with potato masher or fork to desired consistency. Add peanut butter, herbs, spices, fried onions and olive oil and continue to mash. I prefer to use a fork at this stage. Meanwhile toast your slice of bread and crumble into mixture. If the consistency is to thick and not enough moisture as a splash of milk of choice. Finally mold into patty shape and fry in non stick pan till even color on both sides. 

 

 

Meal Prepping Tip:

Save time by doubling the recipe and freeze the burger patties. Take out freezer 30 mins before cooking.
