Easy Homemade Mushroom and Cheese Quiche

How to make a vegetarian quiche?

Quiches once you get the hang of them are a simple easy recipe for any occasion. I prefer them cold and paired with a side salad. However eat them as you like! No judgement. This recipe came up when i had some leftover veg in the fridge , so instead of binning them i created this delicious simple quiche.


  • 1 pack short crust pastry
  • 5 eggs
  • 3 tbsp soy milk
  • 1 green pepper
  • 1 cup grated cheddar cheese
  • 7 button mushrooms 
  • half an onion


Grease a small quiche baking pan, and line with pastry. Bake pastry in the oven at 180 for about 5 mins. Tip: You want to half cook the pastry to avoid a soggy bottom.

Dice the onion and peppers. Slice the mushrooms thinly. Fry onions, pepper and mushrooms for about 4 mins, till all cooked through.

In a large mixing bowl, whisk the eggs and soy milk and season with salt and pepper. Add the grated cheese and cooked veg to the mixing bowl. Once combined pour into the quiche dish and bake at 180 for around 20 mins.

Tip: If you don’t understand if your quiche is ready, shake the pan a little. If it wobbles it is not done, however if it doesn’t it is ready to eat! Enjoy!
